What sounds good for dessert??

Happy Thursday, everyone. I do not have to work tomorrow. Yippee! Of course the reason is not a good one. Hubby has to have another surgery on his foot tomorrow. Not Yippee. It is not major, thank goodness, but will be inconvenient as he will have to stay off of it for a while. Is it odd that we now consider surgery an inconvenience instead of a big deal?

So, it is left to me to make Valentine's Day dinner. Usually Hubby does this. I don't know that I have ever cooked on V day, so I asked what he would like and his response, "Cannelloni."

Ummmm...yeah....I have never made that. I have a vague idea about how to make it, so asked what he would like it stuffed with. His answer "cheese." Ummmm....Okay....what type of sauce, red or white? "White." As you can see, he was not giving very detailed answers. LOL! I went to the store and could not find cannelloni, but did find manicotti shells and later found out they are the same thing. (I was NOT making my own pasta sheets and wrapping them. Too much work for me!)

I also bough ricotta cheese, since I already have mozarella and parmesan. So, I will be making 3 cheese and spinache manicotti with Alfredo sauce. Yum! Yum! We will have a salad and garlic bread to accompany.

My dilemma, what to make for dessert. Hubby LOVES dessert. He loves ALL desserts, so would be happy with cookies, brownies, cake, pie, ice cream. You get the drift. But I would like to make some special dessert. Maybe it is too early in the morning to think about dessert, so nothing just sounds incredible.

So....can anyone give me some inspiration?

Can I ask why he has to keep having surgeries? Or you could just tell me to shut up?!? And yes, you are a bit odd for thinking that it is an inconvenience? Said with honesty and love!
And I think you need to make something with strawberries for dessert. Just seems like something that would go with Cannelloni.

Hi, SonyaAnn! You can ask me anything. LOL! Hubby is diabetic and has had problems with his feet for years. He has compromised circulation in his left leg so the healing process is LONG. His podiatrist has been conservative in the surgeries trying to save as much of his feet as possible, so just does minor ones each time. We are hoping this will be the last for a while.


Something with strawberries would be good since I have a lot of them in the freezer. Now what to do with them.

Hi, Marilyn's Money. I was thinking about cheesecake. That might be what I make. We could put strawberries on it. Yum!

Hi, SonyaAnn! I made cupcakes. LOL! That is what Hubby wanted. I will blog about dinner when I get home tonight.

Hubby is doing okay. The surgery went well, the doctor was pleased, but Hubby was in a lot of pain this weekend. We are hoping it gets better pretty quickly. He is grumpy when he is in pain.

I'm glad that he is doing a bit better. I would be worried all the time. Is he in the home stretch yet?

Hi, SonyaAnn. I guess we have been doing this so long that it takes a lot more to worry me.

We don't know what the home stretch might be. The dr said this should be the last surgery for a while. We are hoping that is the case.

What do you mean for a while? Why doesn't he just do it right and that be the end of it? I know you said a little at a time but this can't be good for him to keep going through surgery. Sorry but my big mouth gets out of control once in a while!

Oh, SonyaAnn, your mouth can go off anytime. I don't mind.

You said the same thing Hubby has said a couple of times, even to the doc. But multiple surgeries is still WAY better than major amputation.

Hubby is diabetic and it is really hard to get post surgical healing and keep out infection. Interestingly, Hubby has always taken great care with his feet. They are just a problem for him.
